Oltrenero Brut DOCG

The name Oltrenero [pronounced Ohl-tray-nair-oh] is the combination of two elements that make up the wine's identity: 'Oltrepo', which means 'beyond the Po', and 'Pinot Nero', which is the varietal used.

VINIFICATION
After the grapes are gently pressed, the must remains in contact with the skins and stored at 60°F for 12 hours. Afterwards, the temperature is raised to at 64°F, and the wine is then fermented; it remains on its lees until July. A liqueur de tirage is added following the traditional method in order to create the wine's sparkling characteristics. The fermentation process continues for 24 months until dégorgement and the liqueur d'expédition is added. This allows the wine to obtain the ideal 4 g/L of residual sugars.

Pale straw yellow enhanced by a soft sparkle and a delicate, continuous perlage

BOUQUET
Long and intense; demonstrates mineral tones as well as scents of wisteria and elderberry; features prominent fruity notes, recalling blackberries, redcurrant, and raspberries with pleasant hints of citrus

PALATE
Decisive, fresh with excellent minerality and end sensations that recall the bouquet

FOOD PAIRINGS
Excellent as an aperitif; pairs well with cured meats, risotto, sushi, ceviche or grilled chicken salad
