Our Prosecco is attractive pale straw-yellow color with a lively, persistent perlage and a rich mousse. The bouquet is refined and elegant with beautiful mineral notes, elegant white flowers and stone fruits, enhanced by pleasing fruity notes. The palate is dry and pleasantly fruity with a fresh, aromatic note on the finish.

Our Tenuta Ca'Bolani Estate is favored with a cool and damp spring, which delivers frequent rains and below average temperatures. These abnormal conditions during the bud break create an irregular growth of both cluster and foliage. Temperatures begin rising in late June and develop into a dry, scorching hot summer. Many parts of Friuli-Venezia Giulia suffer from this oppressive heat, causing yields to be much lower than expected since the plants are heavily stressed. Fortunately, in the Aquileia zone, the presence of aquifers and underground streams provide an ample water to supply the vineyards, particularly the older ones. With their deep roots, our vines are able to survive and benefit from the hot and sunny summer, creating satisfying vintages in terms of both quantity and quality.
VINEYARDS
Friuli Aquileia DOC exhibits two distinct characteristics: in the north there is an average clay structure and towards Grado Lagoon a more pebbly and sandy area appears. An artificial aquifer grants a continuous flow of water, salt, and mineral substances to the area's vineyards. However, the key factor to this extraordinary wine is our alluvial soil. It is a loose soil, which has been shaped and reshaped by water erosion and redeposited in a non-marine setting. Alluvial soil or (Alluvium) is typically comprised of a variety of materials, including fine particles of silt and clay and larger particles of sand and gravel. This soli is found throughout the entire Tenuta Ca'Bolani Estate.
WINEMAKER'S NOTES
"The production process of our Prosecco is quite different compared to other wines: the grape juice, which is only filtered and un-fermented, is stored at 32°F from the time it is harvested until its fermentation. The wine ferments in 60,000-liter stainless steel tanks using the Martinotti Charmat method. This process, though quite extensive, maximizes the product's freshness and preserves the natural, delicate, fresh, floral, and fruity aromas of the Glera grapes. By following this method, we guarantee the wine's freshness year-round. The only challenge we face is an element of unpredictability.
